- Patients with celiac disease may not achieve remission with elimination of gluten alone. This analysis looked at cross-reactivity of antibodies to gliadin (gluten protein) with other foods and various bodily tissues.
- Milk, yeast, corn, instant coffee, and rice were found to be cross-reactive.
- This contributes to my recommendation that gluten, diary, and non-gluten grains like rice and corn be eliminated in an effort to observe for changes in the immune system and inflammation.
